MOSTO VERDE
To get a mosto verde pisco, the distillation must cut short the process of fermentation. In other words, the distillation must start before the sugars in the grape juice have been completely converted into alcohol. The process uses up a lot more grapes (since less alcohol has been produced from them) but the resulting scents and flavours are much fresher and brighter. One of the first things you will notice when opening a bottle of Monteluz 2014 is the intensity of the aromas.
PENTAVARIETAL
Complex multivarietals allow you to go far beyond what you can achieve with a single varietal, the same way that complex perfumes go way beyond what you can achieve with a single essence. Five varietals are used to create the Pisco Monteluz 2014 vintage blend: Moscatel, Torontel, Albilla, Italia and Quebranta.
